Description

Our Pancetta al Tronco is made from Italian pork and characterised by its mild aroma and flavour. Following a traditional preparation with salt and spices, the pancetta undergoes specific phases: cold rest, massage, rolling and pressing, drying and a long curing in our cellar. When cut, it has circular layers of bright red and pinkish white, and is soft on the palate thanks to its fatty parts. The rind of Pancetta al Tronco is pressed between two pieces of woods, hence its name.

To be enjoyed on its own to appreciate its mild flavour, or with a glass of sparkling wine.

All our pork comes from Parma and San Daniele Protected Designation of Origin (PDO) producers.
