Scamorza and Salumificio di Franciacorta Lonzino rolls
If you love lean meat, here's a refined and delicious main course.
Ingredients
4 slices veal
80 g scamorza cheese
8 slices Salumificio di Franciacorta Lonzino
4 tbsp extra virgin olive oil
Salt and pepper to taste
4 x 4 cm sprigs fresh thyme
A pinch of roast seasoning (optional)

Preparation
Beat the slices of veal and top each with two slices of Salumificio di Franciacorta Lonzino and 20 g of scamorza.
Roll the slices of veal, starting from the shorter edge. Fix the rolls with toothpicks (you can also use kitchen string).
Be careful with the ends, which must be folded in to prevent the cheese oozing out during cooking.
Heat the oil in a frying pan, add the rolls and top each with a sprig of thyme; sprinkle with the flavouring or salt and pepper and turn the rolls to brown the entire surface.
Add 250 ml of hot water and continue cooking over a low heat for 20 minutes, keeping a lid on the pan.
Serve the rolls very hot, drizzled with the strained cooking liquid.
